Induction Wok – Rapid Uniform Continuous Wok Cooking

Petrie’s induction heated wok is an industry first, a uniform cooking system that is ultimately variable and with the ability to heat up to the flash point of oil. In traditional ‘brat pan’ style frying systems, gas is the usual heating method. Petrie’s unique stir fry system replicates the action of the best Chinese chefs.

Advantages include:

  • Extremely rapid heating

  • Constant heat when a load is applied (very little cooling off) giving uniform results from start up

  • Temperatures up to 350 degrees or higher if flash point of oil is higher.

  • Controllable responsive heating can be arranged in ‘zones’ to get hotter or cooler during the cooking cycle

  • Unique stir fry system cooks continuously replicating a restaurant chef.

  • Exact colour development as required by the customer

The wok can be combined with a pre cooking steam and microwave system (AMWA) to give a continuous system of raw to cooked product, ideal for the ready meal market.
