Radio Frequency Continuous Cooker
The Continuous Solution to Processed Ham Cooking
Historically, the only way to cook processed ham products has been to cook the batters in moulds in water baths or other batch labour intensive ways. The Petrie RFCC does away with all the batch processes by combining them in a single unique radio frequency system.
The raw meat batter is continuously pumped through a tube where an RF field is applied. This cooks the meat and also holds it at temperature ensuring pasteurisation. The out feed of the tube can be directed straight to slicing and packaging systems removing the need for addition handling.
With a very small footprint, the RFCC can be installed in any food processing facility simply and easily by Petrie staff. Minimal training is required for operators.
Advantages of RFCC system:
-
Continuous production replaces traditional batch methods
-
Through Wall systems can be installed to transfer directly from low care to high care environments with no human contact.
-
RF ensures temperature raised and held for full pasteurisation
-
Totally continuous system possibilities from raw batter to packed product
-
Rapid cooking
-
Efficient – only the meat batter is heated
-
Repeatable process and quality assurance
-
Small footprint of unit
-
Different shapes of tube and therefore product available
Petrie RFCC systems are CE marked and exceed worldwide standards for Radio Frequency safety. The RFCC systems can be designed / modified for use with any power supply and in unusual conditions (high altitude etc).

Applications:
-
Cooking of whole muscle meat batters
-
Sterilisation / pasteurisation of homogenous product
-
Unique shape / profile products
-
Multi tube systems
A pilot system is available for use either at our facility or on your site giving you the opportunity to try the system and develop your own product before a production system is built.
Petrie can tailor the RFCC system to your requirements building on a standard base. This can then be installed at your facility with the minimum of disruption.
